1/3 cup fresh mint, minced
1 ripe avocado, diced (reserve slices for garnish)

1/4 cup fresh lime juice
3 tbsp vegetable broth (or bean cooking liquid)
1/2 tsp salt (optional)
1/8 tsp ground black pepper
1 clove garlic, minced
1/4-1 tsp chipotle chili pepper (to taste)
Directions
Cook the Quinoa: Rinse the quinoa well and cook it in water with garlic and salt. For stovetop cooking, bring to a boil, cover, and simmer for about 15 minutes. Fluff and allow it to cool.
Prepare the Vegetables: In a large bowl, combine the diced cucumber, tomatoes, corn kernels, jalapeño, chickpeas, scallions, parsley, and mint.
Make the Dressing: Whisk together the lime juice, vegetable broth, salt, pepper, garlic, and chipotle chili pepper.
