Edamame Guacamole – A High-Protein, Low-Fat Twist on Classic Guacamole

Ingredients

  • 1 avocado, mashed

  • 1 tbsp cilantro, chopped fine

  • 1/2 cup edamame, cooked and mashed

  • 1/4 tsp cayenne pepper

  • 1/4 onion, diced

  • 1/2 tsp cumin

  • 2 cloves garlic, minced or crushed

  • 1/2 tsp salt

  • 2 roma tomatoes, cut into 1/4" cubes

  • 1/2 tsp black pepper

  • 1 tsp lime juice

Directions

  1. Cook the Edamame: Boil or steam the edamame for 8-10 minutes until tender. Let cool and mash.

  2. Combine Ingredients: In a mixing bowl, combine the mashed edamame, mashed avocado, chopped cilantro, cayenne pepper, diced onion, cumin, minced garlic, salt, pepper, tomato cubes, and lime juice. Blend if you prefer a smoother texture.

  3. Serve and Enjoy: Serve with veggie sticks, whole-grain crackers, or tortilla chips!

  • Make it spicy: Add more cayenne pepper or a diced jalapeño for extra heat.
