Ingredients

  • 1 cauliflower

  • 1/2 cup hummus

  • 1.5 cups (1 can) chickpeas, drained

  • 1/2 tbsp chia seeds

Chimichurri

  • 1 jalapeño, minced

  • 2-3 garlic cloves, minced

  • 1/4 cup red wine vinegar

  • 1 tsp sea salt

  • 1/4 cup fresh cilantro, chopped

  • 1/4 cup fresh parsley, chopped

  • 1 tbsp fresh oregano, chopped

  • 1/4 cup+ aquafaba from chickpea can

Directions

  1. Prepare Cauliflower: Cut a 1” thick cauliflower steak parallel to the stalk, reserving the remaining cauliflower for another use.

  2. Make Chimichurri Sauce: In a food processor, blend the chimichurri ingredients, adding more aquafaba to achieve the desired consistency.

  3. Marinate Cauliflower: Marinate the cauliflower in half of the chimichurri sauce for at least 30 minutes.

  4. Roast Chickpeas: Dry the chickpeas thoroughly and roast at 350°F for 10-15 minutes until crispy.

  5. Cook Cauliflower Steak: Grill or roast the cauliflower on high heat until golden brown and tender (5 min per side on the grill or 10 min per side in a 400°F oven).

  6. Serve: Place the cauliflower steak over hummus, garnish with roasted chickpeas, and drizzle the remaining chimichurri sauce on top.
