Roasted Cauliflower with Lemon Tahini Sauce – A Nutritious Plant-Based Dish

Ingredients
1 whole cauliflower
Sauce:
3 cloves garlic, minced
2 tbsp white miso
1 tbsp tahini
2 tbsp nutritional yeast
1/2 tsp mustard
1 tsp turmeric or 1” fresh turmeric
Salt and pepper, to taste
1/2 cup water
1.5 tbsp fresh lemon juice
3 tbsp parsley, chopped
Directions
Boil the Cauliflower: Place the whole cauliflower in boiling water for about 8 minutes, then remove and pat dry.
Prepare the Sauce: In a blender, combine all the sauce ingredients except water, blending until smooth. Add water and blend again until the sauce reaches a creamy consistency.
Roast the Cauliflower: Place the cauliflower in a baking dish with 1 cup of water at the bottom. Pour half of the sauce over the cauliflower and brush to coat evenly.
Bake: Roast at 400°F for 40 minutes until golden brown.
Serve: Add chopped parsley and fresh black pepper to the remaining sauce, then drizzle over the roasted cauliflower.
