1/4 cup cashews
1 cup finely chopped onion
8 oz button mushrooms, trimmed and sliced

1 cup fresh or frozen green peas
6 cups low-sodium vegetable broth
1 cup short-grain brown rice
2 cloves garlic, minced
1 tsp dried thyme
1 tsp apple cider vinegar
1 tbsp nutritional yeast

Instructions
Soak Cashews: Place cashews in a small bowl, cover with 1 cup water, and soak for 30 minutes.
Cook the Veggies: In a large skillet, combine onion with 1/4 cup water, cover, and cook over high heat for 5 minutes. Stir in mushrooms and black pepper, cooking over medium heat until tender (8-10 minutes). Add peas and cook for another 5 minutes, adding water as needed to prevent sticking. Set aside.
Cook the Rice: In a saucepan, combine vegetable broth, rice, garlic, and thyme. Bring to a boil, reduce to medium heat, and simmer for 45 minutes, stirring occasionally.
Make Cashew Cream: Blend soaked cashews and their water until smooth.
Combine Ingredients: Add mushroom mixture, cashew cream, apple cider vinegar, nutritional yeast, and salt to the cooked rice. Cook over medium heat, stirring often, until creamy (about 30 minutes).
Let Stand: Remove from heat, cover, and let stand for 5 minutes. Adjust seasoning to taste and serve hot.
