  • 1–2 garlic cloves, minced

  • 1/2 tsp salt

2 Cups Cooked Vegetables (Choose 1-3)

  • Sweet potatoes, beets, carrots, mushrooms, spinach, kale, corn, etc.

1 Cup Cooked Grains (Choose 1)

  • Millet, quinoa, brown rice, bulgur, etc.

1½ Cups Cooked Legumes (Choose 1-2)

  • Beans, lentils, chickpeas, etc.

1/2 Cup Flavor/Texture Builders (Choose 2)

  • Fresh herbs, nuts, seeds, sundried tomatoes, etc.

3 tsp Spices (Choose 2-4)

  • Cumin, chili powder, smoked paprika, oregano, turmeric, etc.

1/2 Cup Dry Base (Choose 1)

  • Ground oats, breadcrumbs, cornmeal, etc.

Instructions

  1. Cook Veggies: Sauté onions, garlic, and salt in water/broth until translucent (2-3 mins). Add other veggies and cook until soft (5-10 mins).

  2. Mix Ingredients: Transfer cooked veggies to a food processor, add grains, legumes, flavor builders, spices, and dry base. Pulse until combined but not a paste.

  3. Form Patties: Check consistency—if too crumbly, add reserved bean liquid; if too wet, add more dry base. Shape into patties and refrigerate for 30 mins.

  4. Bake: Preheat oven to 375°F. Bake for 15 minutes per side (30 mins total).

  5. Serve or Store: Enjoy immediately or freeze for later use.
