Ingredients

  • 1 medium sweet potato, cooked

  • 1 (15 oz) can black beans, drained and rinsed

  • 1/4 cup red onion, chopped

  • 1/2 cup rolled or quick oats

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • 1/2-1 tsp salt, to taste

For Serving

  • 6 whole grain burger buns or lettuce wraps

  • Lettuce, tomato slices, red onion, avocado slices

  • Hot sauce, mustard, or sugar-free ketchup

Instructions

  1. Cook Sweet Potato: Preheat oven to 400°F. Halve the sweet potato lengthwise and bake face down on parchment paper for 30 minutes, until fork-tender. Lower oven to 375°F.

  2. Prepare Burger Mixture: Scoop sweet potato flesh into a bowl and mash. Add black beans and mash slightly, leaving some beans whole. Add onions, oats, cumin, smoked paprika, onion powder, garlic powder, and salt. Stir until combined.

  3. Form Patties: Scoop 1/2 cup of the mixture to form burger patties. Place on a parchment-lined baking sheet.

  4. Bake: Bake for 15 minutes, flip, and bake another 15 minutes.

  5. Serve: Add to buns or lettuce wraps with toppings of choice—lettuce, tomato, red onion, avocado, mustard, hot sauce, or ketchup.
