Ingredients
1 medium sweet potato, cooked
1 (15 oz) can black beans, drained and rinsed
1/4 cup red onion, chopped
1/2 cup rolled or quick oats
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp onion powder
1/2 tsp garlic powder
1/2-1 tsp salt, to taste
For Serving
6 whole grain burger buns or lettuce wraps
Lettuce, tomato slices, red onion, avocado slices
Hot sauce, mustard, or sugar-free ketchup
Instructions
Cook Sweet Potato: Preheat oven to 400°F. Halve the sweet potato lengthwise and bake face down on parchment paper for 30 minutes, until fork-tender. Lower oven to 375°F.
Prepare Burger Mixture: Scoop sweet potato flesh into a bowl and mash. Add black beans and mash slightly, leaving some beans whole. Add onions, oats, cumin, smoked paprika, onion powder, garlic powder, and salt. Stir until combined.
Form Patties: Scoop 1/2 cup of the mixture to form burger patties. Place on a parchment-lined baking sheet.
Bake: Bake for 15 minutes, flip, and bake another 15 minutes.
Serve: Add to buns or lettuce wraps with toppings of choice—lettuce, tomato, red onion, avocado, mustard, hot sauce, or ketchup.
