Ingredients
2½ cups unsalted raw almonds
2½ cups unsalted raw pecans
2 tablespoons maple syrup
3 tablespoons tamari or soy sauce
2 teaspoons chili powder (adjust to taste)
2 teaspoons ground cumin
1½ teaspoons cinnamon
½ teaspoon ground allspice
½ teaspoon cayenne (more if you like it spicy)
Directions
Preheat the Oven: Position the oven rack in the middle and set it to 300°F (150°C). Line a large baking sheet with parchment paper.
Prepare the Spiced Mix: In a medium bowl, combine the almonds and pecans. In a separate small bowl, whisk together the tamari, maple syrup, and all the spices until well mixed.
Coat the Nuts: Pour the spiced mixture over the nuts and mix until all nuts are fully coated.
Bake: Spread the coated nuts evenly on the lined baking sheet in a single layer. Bake for 35-38 minutes, flipping twice for even roasting.
Cool & Serve: Remove from the oven and let the nuts cool completely on the tray. They will crisp up as they cool. Store in an airtight container for up to 2 weeks.
Tips & Variations
Watch the Baking Time: Keep an eye on the nuts during the last 5 minutes to prevent burning.
