Ingredients
1 package extra-firm tofu
3 tbsp sesame seeds
3/4 cup orange juice
3 tbsp tamari or aminos
2 tbsp pure maple syrup
1 tbsp brown rice vinegar
1½ tsp arrowroot powder
1 lb frozen stir-fry vegetables
4 cups hot cooked brown rice
2 tbsp sliced scallion
1 tbsp sesame seeds, toasted
Directions
Prepare the Tofu: Preheat the air fryer to 375°F. Cut the tofu horizontally into three planks and press between two cotton towels with a heavy plate for 25 minutes to remove excess moisture. Coat tofu with sesame seeds.
Air-Fry the Tofu: Line air fryer trays with foil, place tofu planks, and air-fry for 12-15 minutes until browned and crispy, turning once. Cut tofu into bite-sized pieces.
Cook the Vegetables: In a small bowl, mix orange juice, tamari, maple syrup, vinegar, and arrowroot powder. Cook the vegetables in a large skillet over medium heat for 5-7 minutes, adding water as needed. Add the sauce and cook until thickened.
